تعتبر شجرة العليقة الملتهبة من مميزات دير سانت كاترين ، حيث أنها النبات الوحيد الذي لا ينمو الا في الدير وقد سميت هذه الشجرة تيمنا بالمكان الذي رأى فيه موسى عليه السلام النار عندما ترك زوجته وابنه ليحضر لهما الطعام ، وتوجد الشجرة بالدير ويحيطها جدار من أجل الحماية.
